Sweetcorn Fritters recipe

Sweetcorn combines with chilli, spring onions, coriander and chilli before being mixed into a light batter and then fried in oil to create sweet little sweetcorn fritters. Serve with a yoghurt sauce to cool down the heat, or serve with a tangy tomato salsa to add extra flavour.

Ingredients:

  • 400g sweetcorn, either fresh or tinned, drained
  • 150g plain flour
  • 150ml milk
  • 2 eggs
  • 1/2 tsp. baking powder
  • Handful fresh coriander
  • 1 red chilli
  • 4 spring onions
  • Oil to fry

Directions:

  1. Sieve the flour and baking powder into a bowl. Make a well in the centre and then whisk the eggs and milk together before adding to the well in the flour. Use a spoon to gradually bring the flour mixture into the eggs, then continue stirring until you have a thick smooth batter. Set to one side.

  2. Finely chop the spring onions and coriander. Deseed the chilli and finely chop.

  3. Stir the sweetcorn, onions, coriander and chilli into the batter and season with salt and pepper.

  4. Heat oil in a frying pan and drop spoonfuls of the mixture into the pan. Fry until golden underneath, then flip over and fry until golden on the other side.

If you like, arrange the fritters on top of some salad just to make this dish a little healthier. This recipe serves four.
