Stir Fried Sweetcorn recipe
This is a great way to cook sweetcorn when serving it as a side dish to jazz it up a little. Fry in groundnut oil or wok oil if you can find it; if not, ordinary vegetable oil will be fine. Sweetcorn combines with Chinese flavours and pine nuts to make a lovely side dish full of texture and flavour.
Ingredients:
- 300g sweetcorn kernels
- 150g pine nuts
- 1 tbsp. vegetable oil or groundnut oil or wok oil
- 1 garlic clove, crushed
- 1 tsp. fresh ginger, minced
- 1/4 red chilli, deseeded and finely diced or 1 tsp. minced chilli, jarred
Directions:
Dry fry the pine nuts in a hot frying pan until toasted and browned. Keep an eye on them so that they don't catch. Set to one side.
Heat the oil in a wok and add the garlic, ginger and chilli. Cook for one minute, then add the sweetcorn kernels and cook for another minute or two until tender but still crunchy.
To serve, mix the pine nuts into the fried sweetcorn.
