Sweetcorn, Black Bean and Avocado Salsa recipe
A simple to make, easy salsa perfect for serving with tortilla chips or as a side to any Mexican inspired main course. This would be delicious spooned into tortillas, topped with cheese and then folded and fried to create a yummy snack dish.
Ingredients:
- 3 400g tins sweetcorn, drained
- 2 400g tins black beans, drained
- 1 400g tin chopped tomatoes
- 5 spring onions
- 1 red onion
- 1 red pepper
- 2 garlic cloves
- 1 avocado
- Juice of one lime
- Handful freshly chopped coriander
- Olive oil
- Salt and pepper
Directions:
Finely chop the spring onions and red onion. Deseed the pepper and chop, mince the garlic cloves, then chop, destone and cube the avocado.
Mix sweetcorn, black beans, tomatoes, onions, pepper, cloves and avocado together. Add lime juice and coriander, then add enough oil to combine.
Season well to taste, then put into a bowl and cover until ready to use.
