Pork, Prawn & Sweetcorn Soup recipe
This yummy pork, prawn and sweetcorn soup is deliciously different - sweet, silky and creamy with surf 'n' turf in the form of cubed pork and sweet prawns. You can use fresh or frozen sweetcorn, depending on what you have to hand.
Ingredients:
- 4 ears fresh sweetcorn
- 120g pork, cubed
- 1 onion
- 1 garlic clove
- 120g prawns
- 1 litre chicken stock
- 1 tbsp. oil
- Salt and pepper
Directions:
Shuck and desilk the sweetcorn. Slice the kernels of corn from the cobs.
Finely chop the onion and mince the garlic cloves. Devein the prawns if they are fresh and peel them.
Heat the oil in a pan and fry the onions and garlic together for about five minutes. Add the pork and cook for five minutes, and then add the prawns and cook for another five minutes.
Stir the sweetcorn in, then add the chicken stock and bring to the boil. Simmer for ten minutes, then season with salt and pepper to taste before serving.
