Sweetcorn Dip recipe

This is a wonderful alternative to a traditional salsa and is perfect for serving up with tortilla chips. Add more or less chilli depending on your personal preferences, and just be sure to make up plenty of this so you don't run out as it's sure to be a hit with the whole family!

Ingredients:

  • 2 tins sweetcorn, drained
  • 1 red onion
  • 1 tomato
  • 1/2 cucumber
  • Handful fresh mint leaves
  • Handful fresh coriander leaves
  • 1 red chilli
  • 4 tbsp. mayonnaise
  • Squeeze of lime to taste
  • Salt and pepper

Directions:

  1. Finely chip the onion and tomato. Slice the cucumber down the middle, then remove the seeds with a spoon. Dice.

  2. Deseed the chilli and finely chop it, then finely chop the mint and coriander leaves.

  3. Stir the sweetcorn, onion, tomato, cucumber, mint leaves, coriander leaves, chilli, mayo, lime and salt and pepper together. Cover then put into the fridge overnight before serving.

Add lime juice to taste - either use fresh or bottled depending on what you have to hand. This recipe serves 6.
