BBQ Corn on the Cob recipe
This super simple recipe is an incredibly way of preparing corn on the cob for the BBQ - but you could also cook them in a frying pan or on a griddle pan. The corn is soaked in a brining liquid for half an hour before being cooked and covered with butter.
Ingredients:
- 3 3/4 litres cold water
- 150g salt
- 100g caster sugar
- 8 ears corn
- Butter to taste
- Salt and pepper
Directions:
Remove the husks and silks from the cobs. Mix the salt and sugar into the water until dissolved, then add the ears of corn and soak for at least half an hour, up to eight hours.
Remove the cobs from the brine and oil the BBQ or pan. Cook the cobs, brushing with butter and turning every few minutes until the corn is tender, slightly charred and sweet. Season with salt and pepper to serve.
