Bacon and Sweetcorn Muffins recipe
If you're looking for something different to serve up at breakfast why not give these bacon and sweetcorn muffins a try? Bacon combines with pureed sweetcorn and other ingredients to create savoury muffins perfect for spreading with butter.
Ingredients:
- 250g plain flour
- 200g sweetcorn
- 4 slices bacon, cooked and chopped
- 2 eggs
- 75ml milk
- 4 tbsp. veg oil
- 50g butter, melted
- Pinch salt
- 3 tsp. baking powder
- 2 tbsp. caster sugar
- 1 tbsp. wheatgerm
Directions:
Puree the sweetcorn in a processor.
In a bowl, combine flour, wheatgerm, caster sugar, baking powder and salt.
Heat the oven to 190C and grease a muffin tin.
Combine pureed sweetcorn, eggs, milk, oil, melted butter and bacon bits in another bowl, then gradually add the wet mixture to the dry mixture until fully combined.
Spoon the batter into the muffin tin so they are filled 3/4 of the way full, then bake for 25 minutes in the preheated oven until golden and risen.
